My work can’t get much better than tasting my way through all of the delicious Cacique products. I have been loving creating recipes with them! And this recipe combines two of my favorites: beef chorizo and Enchilado cheese.
If you’ve never tried either of these, you’re missing out on a whole lot of deliciousness. And when you mix them together — oh my! The spicy zest and earthiness of the chorizo sitting beneath the creamy, melting Enchilado with its hints of paprika, is out of this world.
This is a fantastic comfort food meal for dinner or for a relaxed weekend lunch. The whole family should love it. While the chorizo is spicy enough for those who enjoy a bit of heat, it’s not so spicy that kids won’t love it, too.
