If you’ve been hanging out on Cooking On The Weekends for a while, you probably know that I am a regular recipe contributor for the food section at Momtastic. I’ve been writing for them for about seven years!  Since they’re a parenting site, the recipes are typically quick, easy, and kid-friendly — and like everything here on Cooing On The Weekends, my ultimate goal is that they be super delicious!   Oven Baked Zucchini Chips - Crispy on the outside, soft on the inside and absolutely packed with delicious flavors! This is one I just had to share with you here.  My family has been eating these “chips” like they are going out of style!  I’ve made them three times since I first wrote the recipe, which was only about a week ago!Oven Baked Zucchini Chips - Crispy on the outside, soft on the inside and absolutely packed with delicious flavors! They’re lovely with the Lemon Yogurt Dipping Sauce I made to go with them, which has a slight kick to it — though my 10-year-old son would tell you to use Ranch dressing, and my 13-year-old might tell you to use ketchup (GASP!).

    Why is it that fried food can’t be good for us? Good thing you make baked versions of things I love! Quick question, as I thinking of serving these as an appetizer at a party – do they hold up well once out of the oven? Thanks for your thoughts on this, Valentina!

      Hi David! These are definitely best a few minutes out of the oven. They’re still good reheated, but not the same. You can prep them through the breading step up to a couple of hours ahead of time, keeping them covered and refrigerated — and then put them in the oven just in time for guests to arrive/eat. (If you have leftovers and reheat them, be sure to do so in the oven — to maximize crispiness!) Hope you like them as much as we do. 🙂

    Fried zucchini is one of my “can’t stop” foods. Meaning once I start eating them I can’t stop. You can see how a baked version might be beneficial to me. GREG
