This Beet and Avocado Salad with Pixie Tangerines is one of the prettiest composed salad recipes — like a painting on a plate! And it’s an explosion of fresh, sweet flavors that will wow you and your guests! Like this salad, I’m going to keep it fairly simple today.
If you’ve been following my recipes for a while, you know I think of food as my art medium. Much like acrylic paint or colored pencils. And composed salad recipes are perfect for “painting.”
What is a composed salad?
- Composed salad recipes are not tossed. The different components in the salad are arranged on the plate.
- The dressing is not typically mixed into the ingredients, it’s drizzled on top after they have been artfully arranged on the plate.
It actually would have been difficult for this Beet and Avocado Salad with Pixie Tangerines not to have turned out to be so pretty. How could you go wrong when when combining such stunning, saturated colors? And check it out, the avocado is two-tone!
Side note: the darker green portion of an avocado, that which was closest to the skin, is the area packed with the most nutrients. So be sure to get all of it — especially if you’re scooping the avocado “meat” out with a spoon.
I thought the vibrant and contrasting colors of these ingredients would pop on a bright white plate.
And I knew their flavors and textures would be perfect together. I think this is going to become one of my go-to beautiful winter salads.
It’s much like a painting with food, really.

This beautiful winter salad is an explosion of fresh, sweet flavors that will wow you and your guests!
- 2 cups baby beets (click here for How to Roast Beets), roasted, peeled, thinly sliced
- 1 large avocado (click here for How to Peel and Cut an Avocado), peeled, thinly sliced
- 4 Ojai Pixie tangerines (click Here for How to Peel and Slice Citrus), peeled, thinly sliced
- 1 tablespoon Roquefort cheese, crumbled
- 1 Ojai Pixie, sliced in half
Arrange the three beet, avocado and tangerines beautifully between four appetizer plates.
Sprinkle each one with about ¼ of the cheese.
Squeeze the juice from the 2 Pixie halves over the arranged plates.
