As a food blogger, one of the best things that can happen is when a brand you already know and love wants to work with you.
I’m super excited to share I’m creating a few recipes for Cacique — the #1 brand of Mexican-style cheeses, chorizos, and cremas. And I’m hoping to inspire you to try them with these recipes.
Can you tell just from looking at these warm and hearty ingredients, that this recipe for Cacique is a super delicious comfort food dish?
Roasted Pasilla Mushroom Squash Gratin
This is a vegetarian comfort food dish, and I love it for so many reasons. Its spice is perfectly balanced with a bit of heat from the Pasilla Chiles, a bit of sweetness from the squash and the fresh flavor of Cacique® Crema Mexicana. It’s rich and creamy, while still what I’d consider “light and healthy” — and the bits of Cacique® Ranchero® Queso Fresco on top are enough to make anyone want to dive right in.
Can you make it ahead?
Yes! This dish can be made ahead of time and best of all, everyone at my dinner table cleans their plates and asks for more.
You can get the recipe for Fire Roasted Pasilla Mushroom Squash Gratin here on the Cacique blog.
I hope you enjoy every last, comforting bite!
