    Oven Baked Zucchini Chips

    A most excellent vegetarian side dish or snack, these Oven Baked Zucchini Chips are crispy on the outside, soft on the inside and packed with deliciousness! I love zucchini chips with Parmesan, it's what gives them an extra punch of flavor. Oven Baked Zucchini Chips - Crispy on the outside, soft on the inside and absolutely packed with delicious flavors!

    Quick, Easy and Delicious

    I've written many recipes for different publications over the years, and this one is featured on Momtastic. They're a parenting site, so the recipes are typically quick, easy, and kid-friendly -- and like everything here on Cooking On The Weekends, my ultimate goal is that they be super delicious!

    This is one I just had to share with you here. My family has been eating these "chips" like they are going out of style!

    What's in this recipe?

    • zucchini
    • panko breadcrumbs
    • Parmesan cheese
    • garlic powder, paprika, thyme, salt
    • eggs
    • all-purpose flour

    There's something about zucchini chips with Parmesan that will keep you coming back for more.

    To Dip or Not to Dip

    Zucchini chips with Parmesan are lovely with a delicious yogurt-lime dipping sauce, and they're absolutely fabulous on their own, too. I generally don't dip them in anything because garlic, paprika and thyme crust is heavenly.

      Why is it that fried food can't be good for us? Good thing you make baked versions of things I love! Quick question, as I thinking of serving these as an appetizer at a party - do they hold up well once out of the oven? Thanks for your thoughts on this, Valentina!

        Hi David! These are definitely best a few minutes out of the oven. They're still good reheated, but not the same. You can prep them through the breading step up to a couple of hours ahead of time, keeping them covered and refrigerated -- and then put them in the oven just in time for guests to arrive/eat. (If you have leftovers and reheat them, be sure to do so in the oven -- to maximize crispiness!) Hope you like them as much as we do. 🙂

      Fried zucchini is one of my "can't stop" foods. Meaning once I start eating them I can't stop. You can see how a baked version might be beneficial to me. GREG
