Chocolate-Banana Hazelnut Waffles {Gluten-Free Recipe}

There's something magical about chocolate and hazelnuts, and when you add in the other tasty ingredients, you've got a breakfast you'll remember forever!

  • 1 cup mashed banana
  • ¼ cup granulated sugar
  • ¼ teaspoon sea salt
  • 1 tablespoon vanilla
  • 2 large eggs
  • 1 cup Bob's Red Mill Hazelnut Meal
  • ¼ cup all-purpose gluten-free flour sifted
  • 3 tablespoons cocoa powder sifted
  • ½ tsp baking soda
  • tablespoons butter melted, divided
  • ¼ cup blanched hazelnuts toasted, chopped
  • about 6 tablespoons maple syrup
  • 1 (approximately 1-ounce) square semisweet chocolate grated


  1. Preheat your waffle iron, and in a medium-sized mixing bowl, combine the banana with the sugar, salt and vanilla.
  2. Use a fork to blend the eggs into the banana mixture, and then fold in the hazelnut meal. Mix until it's as smooth as possible. (There will still be some small banana chunks, and that's okay.)
  3. Add the sifted flour, cocoa powder and baking soda, and mix just to combine.
  4. Fold in 2 tablespoons of the melted butter, and then add the batter to your waffle iron, using it according to the manufacturers instructions. (If necessary, use the remaining ½ tablespoon of melted butter to prevent sticking.)
  5. Use a fine grater to grate the semisweet chocolate over the waffles, and then mix the hazelnuts with the syrup and serve with the waffles.
