Smoky Lemon-Paprika Quinoa Recipe

Ingredients

  • 1 cup dry quinoa
  • 1-3/4 cups water
  • 1 tablespoon olive oil
  • 1 tablespoon lemon zest from about 1 small lemon
  • 2 tablespoons fresh lemon juice from about 1 small lemon
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper

Instructions

  1. In a small to medium-sized sauce pan, combine all of the ingredients.
  2. Gently stir to be sure everything is mixed in.
  3. Bring to a boil, then reduce the heat to low, cover the pan, and simmer until all of the liquid has been absorbed, about 15 minutes.
  4. Stir to fluff it up a bit.
  5. Serve!
