Smoky Paprika Quinoa is a light and healthy side dish that's packed with wonderful flavors. It's delicious with meats, chicken, fish and vegetables.

  • 1 cup dry quinoa
  • cups vegetable stock
  • 1 tablespoon olive oil
  • 1 tablespoon lemon zest (from about 1 small lemon)
  • 2 tablespoons fresh lemon juice (from about 1 small lemon)
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • teaspoon freshly ground black pepper


  1. In a small to medium-sized sauce pan, combine all of the ingredients.
  2. Gently stir to be sure everything is mixed in.
  3. Bring to a boil, then reduce the heat to low, cover the pan, and simmer until all of the liquid has been absorbed, about 15 minutes.
  4. Stir to fluff it up a bit.
  5. Serve!
