Apple Roasted Cinnamon Granola

Ingredients

  • 3 cups Fuji (or other crisp) apples peeled, and cut into a small dice
  • ¾ cup plus 2 tablespoons golden brown sugar divided
  • 1 ½ tablespoons cinnamon divided
  • 2 cups oats
  • 1 cup almond meal
  • cup unsalted butter melted
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon salt

Instructions

  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • In a medium-sized mixing bowl, toss the apples with ¼ cup of the brown sugar and 1-½ teaspoons of the cinnamon.
  • Evenly coat the parchment-lined baking sheet with the apple mixture and roast them in the preheated 350 degree F oven until they are very aromatic and slightly softened, 10 to 15 minutes.
  • Add the roasted apples to a large mixing bowl and save the parchment-lined baking sheet.
  • Add the oats, almond meal, melted butter, vanilla, salt, the remaining brown sugar, and the remaining cinnamon to the apple mixture and stir to blend all of the ingredients evenly.
  • Pour the entire mixture onto the parchment-lined baking sheet and use your hands or a flat-bottomed metal spatula to flatten out the mixture. It should be about ½-inch thick and cover most of the sheet.
  • Roast in the preheated 350 degree F oven until it's a dark golden brown, about 30 minutes. Then use a a flat-bottomed spatula to turn the mixture over (more or less, mixing it). Roast for another 10 minutes or so, until all of it is a dark, golden brown.
  • Remove from the oven and let cool completely on the baking sheet. Then you can use your hands to break it apart into bite-sized pieces.
