Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
In a medium-sized mixing bowl, toss the apples with ¼ cup of the brown sugar and 1-½ teaspoons of the cinnamon.
Evenly coat the parchment-lined baking sheet with the apple mixture and roast them in the preheated 350 degree F oven until they are very aromatic and slightly softened, 10 to 15 minutes.
Add the roasted apples to a large mixing bowl and save the parchment-lined baking sheet.
Add the oats, almond meal, melted butter, vanilla, salt, the remaining brown sugar, and the remaining cinnamon to the apple mixture and stir to blend all of the ingredients evenly.
Pour the entire mixture onto the parchment-lined baking sheet and use your hands or a flat-bottomed metal spatula to flatten out the mixture. It should be about ½-inch thick and cover most of the sheet.
Roast in the preheated 350 degree F oven until it's a dark golden brown, about 30 minutes. Then use a a flat-bottomed spatula to turn the mixture over (more or less, mixing it). Roast for another 10 minutes or so, until all of it is a dark, golden brown.
Remove from the oven and let cool completely on the baking sheet. Then you can use your hands to break it apart into bite-sized pieces.
