Basil Rice with Roasted Garlic

Roasted Garlic-Basil Brown Rice is an excellent fresh, and flavorful side dish, and it's also perfect to sit beneath stews to soak up the delicious flavors.
*Please note that the prep time does not include roasting the garlic, which can be done up to a few days ahead of time. (Here's how.)

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons roasted garlic* (click here for how to roast garlic)
  • 1 cup yellow onion, finely chopped
  • ½ cup basil leaves, washed and dried, finely chopped
  • cups dry brown rice
  • 3 cups vegetable or chicken stock
  • ¾ teaspoon salt
  • freshly ground black pepper

Instructions

  • Cook onions with roasted garlic. Coat the bottom of a medium-sized sauce pot with the oil and place it over medium heat. Add the roasted garlic and onions and cook until the onions are translucent and soft, about 5 minutes.
  • Add rice and basil and sauté. Mix in basil leaves and rice. Stir to be sure all of the grains of rice are coated with the other ingredients, and then sauté for about 2 minutes, stirring almost constantly.
  • Cook. Add the stock and salt, and bring to a boil. Reduce the heat to the lowest setting, cover the pot, and cook until all of the liquid has been absorbed, about 30 minutes.
  • Serve!
