Compound Butter Recipes: Smoky Tomato, Meyer Lemon-Dill, Spiced Chai

Ingredients

Smoky Tomato Butter

  • cup unsalted butter softened
  • ½ teaspoon tomato paste
  • ¼ teaspoon smoked paprika
  • salt and freshly ground pepper to taste

Meyer Lemon-Dill Butter

  • cup unsalted butter softened
  • 1 teaspoon Meyer lemon zest
  • 1 teaspoon Meyer lemon juice
  • ½ teaspoon finely chopped fresh dill
  • salt and freshly ground pepper to taste

Spiced Chai Butter

  • cup unsalted butter softened
  • ½ teaspoon golden brown sugar
  • teaspoon ground cardamom
  • teaspoon ground cinnamon
  • teaspoon ground cloves
  • teaspoon ground ginger

Instructions

For all three recipes

  1. Be sure the butter is at room temperature and is very soft.
  2. Add the softened butter to a small bowl and add the remaining ingredients.
  3. Use a small spoon to mix until it's completely smooth.
  4. With the exception of the Spiced Chai recipe, season to taste with salt and pepper.
