Watermelon Pizza Recipe

This Watermelon Pizza with Feta is a beautiful, refreshing, and super delicious summer treat. A lighter version than most, the flavor of lime puts this one over the top.

Ingredients

  • 2 thick slices of a mini, seedless watermelon (about 5-inch diameter)
  • 2 tablespoons lime juice or a couple of Finger limes
  • about 4 small strawberries, washed and dried, thinly sliced
  • about 2 dozen blueberries washed & dried
  • about 2 tablespoons crumbled Feta cheese

Garnishes

  • a few slices of lime
  • 1 teaspoon finely chopped fresh thyme, plus a few sprigs washed and dried
  • freshly ground black pepper

Instructions

  • Prep watermelon. On a clean dry surface, use a Chef's knife to cut 2 thick rounds from the center of a mini watermelon. Then cut the watermelon rounds horizontally, into approximately 6 slices, like a pie, and place them on large plates.
  • Assemble. Either drizzle about half the juice of one lime over the watermelon slices, or squeeze the "bubbles" from about one finger lime on the slices. Now arrange the strawberries and blueberries on top, any way you'd like to. Add the crumbled Feta evenly.
  • Garnish and serve. Sprinkle with the finely chopped thyme and add the thyme sprigs, lime slices and a few turns of black pepper. Then drizzle with the remaining lime juice or more lime bubbles form a Finger lime and serve!
