  • 1 cup roughly mashed avocado
  • 2 tablespoons finely chopped fresh mint, (washed and dried)
  • 1 teaspoon fresh lemon juice
  • salt and black pepper to taste
  • 12 (¼ to ½ inch) slices French baguette (about 3-inch diameter)
  • about ¼ large mango, thinly sliced
  • about 4 large strawberries, washed, dried and thinly sliced
  • about ½ small grapefruit, about 8 segments
  • about 1 teaspoon crumbled Feta (optional)

Instructions

  • Make the minty avocado. Add the mashed avocado to a small mixing bowl. Mix in the mint and lemon juice. Season to taste with salt, pepper and sugar. (Here’s How to Season to Taste.). Set aside.
  • Prepare the bread. Place the baguette slices on a sheet pan and place it under the broiler just until the edges are golden, about 1 minute. (Keep a close watch!)
  • Assemble. Divide the minty avocado among the baguette slices, and arrange the fruit on top of each one, followed by a light sprinkling of the Feta (if desired).
  • Serve!
